Homemade Black Pepper Sauce Noodles

I do find odd stuff inside the fridge every now and then. Recently, it is a bottle of Sing Long Black Pepper Sauce. Only God knows how long it’s been in there. I believe I bought it from Aeon to stir fry pork with it. Or was it to make gravy for chicken chop. Hah! The answer lies in the phone’s photo album. Gotta go check it out later after i’m done with this story, lol!

Truth is, there isn’t much left to cook anything with it. The kid ran downstairs at that very moment screaming for food, saying he wants to make noodles, and went about dragging his Joyoung Noodlemaker out from under the sink. He hasn’t touched it in over a year! And so, I casually asked him what kind of noodles he has in mind. And then he saw the bottle in my hand and said he wants to eat noodles with black pepper sauce.

I told him 1) there isn’t enough left for cooking gravy for 4 pax with it, 2) I don’t want to cook anything to begin with. He then suggested to add it to the noodles that he will be making. Of course, I am more than happy to oblige. That will settle the remaining sauce once and for all, and we will get a great batch of Homemade Black Pepper Sauce Noodles for dinner!


It doesn’t seem a lot when it was in the bottle. But after shaking and pouring the contents out, it is good enough for a full 500gm batch of noodles. The pic above shows what it looks like after diluting it with some water. It remains fairly thick and flavorful which I believe will surely yield us a nice batch.


20 minutes later, here is our fresh homemade black pepper sauce noodles. It smells pungent enough. Love the light brown tone and the black pepper bits are clearly visible throughout the strands. Lovely!

Here is the Homemade Black Pepper Sauce Noodles recipe for those of you adventurous enough to tryout.

500gm unbleached plain flour
175ml of diluted black pepper sauce

Put the flour into the machine, lock down the cover properly, press start, and slowly dribble the liquid in via the gap on the cover. Have fun, ya!




How To Use The Joyoung Noodlemaker For The First Time

Step by Step on How to use the Joyoung Noodlemaker

Clean and assemble the parts according to manufacturer's instructions. Try this basic noodle recipe:

Measure:

200g flour
70ml water
1tsp oil (add to the water)
1tsp salt

Steps:

1) Pour flour and salt into container
2) Close top cover until it clicks to indicate it is properly locked
3) Press auto to start the machine
4) Slowly pour water (with the oil in it) through the top opening as the machine is kneading
5) Wait 3 minutes and it will start extruding

Tips:

Do not pour water in together with the flour as it will seep out from the bottom of the container. Lift the extruding noodles with one hand like guiding it out and down, and with the other free hand, fan it from behind to cool it. The addition of oil in the dough will prevent the noodle strands from sticking together.

You may add any dry ingredients to the dough together with the flour. Greentea powder, dry herbs, sesame powder, turmeric powder, curry powder, wateva la. As a rough guideline, 1 tablespoon of dry ingredients to 200g flour.

Get this right first and the rest of the intermediate recipes will be child's play

Crab Soup Noodles



Got myself a new small square mold for my Joyoung N51 Noodlemaker late last year. Didnt get to play with it till now. After making noodles of so many shapes and sizes, i have come to like finer noodles. They cook real fast compared to fatty udon type that takes 2 million years to get done, lol!!!

There's still a lot of crab meat in the freezer. So, whipped up a quick pot of crab soup with dehydrated vegetable mix. Added a few small slices of fresh ginger to the soup to cut down the "cold" nature of the soup. It's so sweet. Makes a perfect bowl of Crab Soup Noodles for lunch :)

I used the Joyoung basic noodle recipe to test my new small square mold. Am delighted with my batch of noodles for today. These days, i will just use half a bag of flour as 500g happens to be the max capacity of my Joyoung N51. Add approximately 170ml water with 10ml vco, a teaspoon or so of sea salt. No exact measurements as i have gotten used to gauging the dough texture by sight. For the rest of you still new to making homemade noodles with the Joyoung Noodlemaker, do follow the Joyoung Noodle Maker Recipes here first, ya. Practice makes perfect. Yes! Yes!! Yes!!!

Homemade Butter-Parsley Pasta Recipe


I have some parsley flakes sitting inside a bottle. Gave me an idea for a batch of aromatic pasta for lunch. Malcolm took butter out of the fridge to make sandwich earlier and left it on the kitchen table. It looks so inviting that i decided to use butter instead of oil for my noodles today.

I only have unbleached plain flour left. With the parsley flakes and a teaspoon of clarified butter, my Joyoung Noodle Maker churned out a nice batch of Butter-Parsley flavored pasta. The result is really really good and has that faint herby-buttery scent. Go give it a try:

400g unbleached plain flour
140ml water
1 tsp clarified salted butter
1 tbsp dried parsley flakes (or finely chopped fresh parsley)
1 tsp sea salt

Homemade Low-Gluten Rice Noodle Recipe


These days, i am getting better and better at making low-gluten noodles. It's not easy to combine gluten-free flours with plain flour and produce noodles using the noodlemaker. Took me many attempts to see beautiful, soft, low-gluten noodles like this. Quite close to Mee Suah texture, but not that soft.

Rice noodles are usually produced traditionally by combining steamed rice flour with tapioca flour using hot water, then extruded using a hand-press. I have tried that before with the noodlemaker and it was horrible. The dough was far too wet and gooey for the noodlemaker to extrude and in the end, i only managed to get 6 inches worth of lai fun, LOL!!! I wont say it is not impossible, ok. Just that i need to tweak the (rice flour : tapioca flour) ratio enough times to get it right. *lazy*

And so, i experimented by substituting tapioca flour with plain flour to hold it all together. This is not gluten-free noodles, ya. It is low-gluten rice flour, with a much delicate and softer texture compared to basic plain flour noodles. I did not set the Joyoung Noodlemaker to auto for this batch of rice noodles. Rather, i kneaded the dough with the knead function for 3 cycles just to develop enough gluten from the plain flour to hold it all together without breaking apart when the machine is extruding.

I have tried kneading it more than 3 cycles. I think 6, for a total of 18 minutes worth of kneading time!! It extruded perfectly. But as i wanted a good low-gluten noodle recipe, 6 times would have developed too much gluten from the plain flour. I feel that 3 cycles produces the best textured rice noodles from my Joyoung Noodlemaker. You can, of course, try with 2 cycles or more. It is entirely up to you to experiment. Try it:

Homemade Soba - Best Low-Gluten Noodle Recipe


I'm super happy today. Just produced the best batch of homemade soba noodles with my Joyoung Noodlemaker. It came out smoothly, without having the ridges appearing on the surface of the strands. Dry to the touch, held together well enough to not break as they appeared!!! I managed to get 460g worth of soba with a combination of 400g buckwheat flour + plain flour.

Cooked 150g for my two boys, and have four more servings for later on. Had it with tomatoes-garlic-onions-basil sauce. I know, it's a weird combination but the boys like it. So, i'll just call today's meal Sobaghetti, ok. I know, you all now want to know the ratio used in this batch of homemade low-gluten noodle recipe right.... here you go :

Homemade Wholemeal Honey Pasta

Life is good, especially good when the i get an idea to transform plain simple flour into something different for my family to enjoy. This morning, as i was rummaging through the many flour containers inside the fridge, i found a small packet of wholemeal flour. Hubs bought a new jar of acacia honey from the organic shop and both items gave me an idea to make a batch of wholemeal honey pasta to make spaghetti for the kids with my Joyoung Noodlemaker.

I did not weigh how much wholemeal flour i had and just added extra plain flour to it to make it a 400g batch. With 140ml honey+water, oil and sea salt, i got myself a nice batch of sweet-smelling homemade wholemeal honey-flavored pasta. Wholemeal flour gave the batch of pasta great texture and bite without being chewy. It is also good eaten plain without topping, especially when made with the macaroni disc. Kids will love the delicate taste of honey in it.

Homemade Wholemeal Honey Pasta Recipe

250g organic unbleached plain flour
150g organic wholemeal flour
140ml organic acacia honey+water (sweetness is up to you)
1tsp sea salt
1tsp virgin coconut oil

Homemade Carrot Noodles


Hubs wanted to drink carrot juice today. So, the good wife went to buy carrots back to juice a large cup for him. Then realized all the pulp will go to waste if i were to just flush them down the sinkhole. Watudu, being the frugal person that i am, measured and poured some unbleached plain flour into the Joyoung Noodlemaker. Added a pinch of salt to it. Used as much carrot juice and pulp as i could for a batch of Homemade Carrot Noodles, a few drops of garlic oil, and pressed the auto button.

This is the second time i'm making noodles today, lol. First was just a batch of plain ones as you can see in the container beneath my hand. I really do love to see the small orangey carrot bits along the noodle strands. Arent they lovely? Come to think of it, i should have added honey to the liquid mixture. My kids loved the batch of Homemade Wholemeal Honey Noodles i made earlier. Maybe tomorrow when someone wants to drink carrot juice, lol!!!

How To Make Tomato-Egg Noodles (Pictorial Guide)

I have nothing much in my fridge except vege and unbleached hi protein flour today. No idea what to cook for the kids either, lol. After rummaging through the containers, i saw a few tomatoes, some broccoli and purple sweet potatoes. As the latter two require steaming and mashing to make noodles with, i opted for tomatoes this time.


Cut up 2 large tomatoes and blended them for the juice. The remaining pulp will be perfect for cooking the sauce to go with the noodles.


Cracked an egg into the liquid measuring jug that came with the Joyoung Noodlemaker.


Add the fresh tomato juice in to achieve 120ml of liquid in total. I also added 1 teaspoon of olive oil into the liquid for extra smooth noodles.


This time, i used 250g of the unbleached hi protein flour and 50g of superfine flour. Added 1 teaspoon of sea salt for added flavor.


And voila.... a batch of silky smooth springy homemade tomato-egg noodles for today. Then, my 8yo little chef skipped into the kitchen. As he sipped on the remaining tomato juice, complained why isnt the color red like the tomatoes. o.O..... I asked him to go do the color math. Red Tomato + Yellow Yolk = ............. and he went, "ya horrr... Orange Noodles". Pheeewwww... *wipes sweat from forehead* :p
