  1. Hi, noticed that you have the N51 model - any reason why you picked this model over N6?

    1. Hi, Ngiam, The N51 just happened to be the newer model compareed to the N6 when i bought it. There was a slight modification to the paddle and the dough is kneaded faster and more evenly. There is also a difference to the molds given, whereby the N6 has a small square, whereby the the N51 has a flat wide. Not much difference when it comes to the quality of noodles produced.

  2. Hi. Thank you for taking the time to write this blog. I also have this noodle maker but don't have very good outcome.. Noodles quite soggy when cooked..am I adding to much flour? Do you let the noodles rest a while before cooking? How many minutes do you boil it? Hope you can help. Thanks

    1. Hi, do give the basic noodle recipe a try. As we now have fresh pasta, 3 minutes is all it takes for the finer noodles, and 5+ minutes for the fatter noodles. And oh, give the noodles a cold rinse once out of the hot cooking water. This is to stop the cooking process. You will get noodles with a good bite to it :)
