How To Use The Joyoung Noodlemaker For The First Time

Step by Step on How to use the Joyoung Noodlemaker

Clean and assemble the parts according to manufacturer's instructions. Try this basic noodle recipe:

Measure:

200g flour
70ml water
1tsp oil (add to the water)
1tsp salt

Steps:

1) Pour flour and salt into container
2) Close top cover until it clicks to indicate it is properly locked
3) Press auto to start the machine
4) Slowly pour water (with the oil in it) through the top opening as the machine is kneading
5) Wait 3 minutes and it will start extruding

Tips:

Do not pour water in together with the flour as it will seep out from the bottom of the container. Lift the extruding noodles with one hand like guiding it out and down, and with the other free hand, fan it from behind to cool it. The addition of oil in the dough will prevent the noodle strands from sticking together.

You may add any dry ingredients to the dough together with the flour. Greentea powder, dry herbs, sesame powder, turmeric powder, curry powder, wateva la. As a rough guideline, 1 tablespoon of dry ingredients to 200g flour.

Get this right first and the rest of the intermediate recipes will be child's play

Crab Soup Noodles



Got myself a new small square mold for my Joyoung N51 Noodlemaker late last year. Didnt get to play with it till now. After making noodles of so many shapes and sizes, i have come to like finer noodles. They cook real fast compared to fatty udon type that takes 2 million years to get done, lol!!!

There's still a lot of crab meat in the freezer. So, whipped up a quick pot of crab soup with dehydrated vegetable mix. Added a few small slices of fresh ginger to the soup to cut down the "cold" nature of the soup. It's so sweet. Makes a perfect bowl of Crab Soup Noodles for lunch :)

I used the Joyoung basic noodle recipe to test my new small square mold. Am delighted with my batch of noodles for today. These days, i will just use half a bag of flour as 500g happens to be the max capacity of my Joyoung N51. Add approximately 170ml water with 10ml vco, a teaspoon or so of sea salt. No exact measurements as i have gotten used to gauging the dough texture by sight.
