Egg noodles remind me of wantan meen. When i was a kid, we lived right opposite a wantan meen seller. Their stall was at the wet market down the street where we lived. My favorite pastime then was wrapping wantan with his daughter whenever i go to the market. I got really good at it and her dad usually treats me to a plate of kon lou wantan meen with big fat wantans. As they also ran a noodle factory, my mom also buys their famous egg noodles.

I love egg noodles. They are unlike ordinary noodles as egg noodles has that special springy bite to it. With just flour, egg and water, i'm so happy that i can make my own version of egg noodle whenever i feel like it. Over the years of observing how my neighbor cooks wantan meen, i have since become very good at achieving that particular "bite" that i'm so fond of.

One very important step to note when cooking homemade egg noodles is you must give the noodles a cold rinse by either running it under cold tap water, or placing them into a pot of cold water and loosening them up. This will stop the cooking process and you will end up with springy noodles that is simply delightful with every bite. Turmeric powder will stain the white parts of your machine. Dont worry as the stains will come off little by little for as long as you use the noodle maker. Do not attempt to scrub it off. Normal washing with a dishwashing liquid will do.

Homemade Basic Noodle Recipe

When you use the noodle maker for the first time, test it with a batch of homemade noodles using plain flour and water. It is very easy.

Homemade Basic Noodle Recipe

200g plain flour
70ml of water.

Assemble the noodle maker according to the manufacturer's instructions. Place flour into the container, close the cover until you hear the click that indicates it is properly locked. Turn noodle maker on to start the kneading process. Then, pour water in through the opening on the cover by moving your hand back and forth horizontally.

The noodle maker will knead for a few minutes and start extruding the dough. Once it's done, the noodle maker will stop. Sprinkle some flour all over the noodles and mix it well to prevent them from sticking together. You can now cook your homemade noodles.

3) Cake flour, also known as super fine flour

4) Wholemeal flour

Other types of flour that can be used with a noodle maker are:

1) Buckwheat flour, rice flour, sorghum flour, etc. These types of flours are gluten-free, and they do not hold well on their own and need to be mixed with plain flour or bread flour in order to produce the gluten needed to produce noodles.

Note: I personally prefer to use organic unbleached flour for my handmade noodles.
