What kinds of flour can be used with a noodle maker?

The four basic flours that can be used with a noodle maker are:

1) Plain flour, also known as general flour.

2) Bread flour, also known as high protein flour

3) Cake flour, also known as super fine flour

4) Wholemeal flour

Other types of flour that can be used with a noodle maker are:

1) Buckwheat flour, rice flour, sorghum flour, etc. These types of flours are gluten-free, and they do not hold well on their own and need to be mixed with plain flour or bread flour in order to produce the gluten needed to produce noodles.

Note: I personally prefer to use organic unbleached flour for my handmade noodles.
