Homemade Egg Noodle Recipe
I love egg noodles. They are unlike ordinary noodles as egg noodles has that special springy bite to it. With just flour, egg and water, i'm so happy that i can make my own version of egg noodle whenever i feel like it. Over the years of observing how my neighbor cooks wantan meen, i have since become very good at achieving that particular "bite" that i'm so fond of.
One very important step to note when cooking homemade egg noodles is you must give the noodles a cold rinse by either running it under cold tap water, or placing them into a pot of cold water and loosening them up. This will stop the cooking process and you will end up with springy noodles that is simply delightful with every bite. When you use the noodle maker for the first time, test it with a batch of homemade noodles using plain flour and water. It is very easy.

Assemble the noodle maker according to the manufacturer's instructions. Place flour into the container, close the cover until you hear the click that indicates it is properly locked. Turn noodle maker on to start the kneading process. Then, pour water in through the opening on the cover by moving your hand back and forth horizontally.
The noodle maker will knead for a few minutes and start extruding the dough. Once it's done, the noodle maker will stop. Sprinkle some flour all over the noodles and mix it well to prevent them from sticking together. You can now cook your homemade noodles.
